Is there somewhere which details what all of these and the other settings within the 'effects and extra colours' menu actually do?
I can see they alter the general colour of my display but how are they treating blue light? What are the differences with respect to the blue light being emitted from my display for these settings?

Several of these are gentle settings for eyestrain - and some of the others capture the "look" of a filter without capturing the non-visual effects exactly.
But for blue light, you could also see if the "circadian response" number makes sense - we are doing a ton of work to get this number, including your screen size, current dimming, and how a typical person's body responds to that light.
The only one that is useful very late at night is the Himalayan Salt Lamp, which is pretty neat - it is a heavily filtered incandescent.

Could you explain this please? I would like to know if there is a setting I can use to reduce blue light during the day time, instead of only at night time.

@kieran Yes any of the color temperature settings will work for this.
